I have already downloaded adobe reader, and can't get the Unit 1 Week 1 Quiz to come up in English. It looks like Chinese writing instead. I have also rebooted my computer to make sure it took. I have also had a struggle in the Loom the same way. Can anyone help me??!!

If you ordered Tapestry DE version of Evaluations and the Loom, those are opened using LockLizard Safeguard Viewer, not Adobe Acrobat.

If you ordered a non-DE version of those products, I'm stumped and I'd need to take a look at your system.
